Patrick Caron (Researcher in CIRAD & Vice President for International Affairs, University of Montpellier) presents the concept of "food system" and explains why it is important to draw on this approach to implement the necessary transition. He explains the notion of sustainability and the framework associated with "sustainable food systems" proposed in the 2017 HLPE report. He concludes by stressing the challenges to be met in order to transform our current food systems in depth.
